with Basil Tomato Concassee & Parmesan
Make tomato concassee with tomatoes, shallots and basil. (salt, white wine)
                  Put the concasee on sliced Aubergines and  topped with parmesan cheese.
                  Put in the oven.
                  Easy vegetarian dish!

 Central Otago Pinot Noir is a popular wine in New Zealand....
We are not big fans of Pinot Noir,
It has a nice aroma, is fruity and light which goes well with a nice cheese like CASTELLO, but definitely not with red meat.
we prefer French Burgundy wine....................
