Aubergines  with Basil Tomato Concassee & Parmesan Make tomato concassee with tomatoes, shallots and basil. (salt, white wine)                   Put the concasee on sliced Aubergines and  topped with parmesan cheese.                   Put in the oven.                   Easy vegetarian dish!
